Spanakopita Recipe - Greek Spinach Pie

My mother made her famous spanakopita recipe for a bridal shower the other day and I helped, as I had done so many times since my childhood. I've watched the recipe evolve over the years. The pita was a hit and my mother and I spend some time trying to document and articulate exactly how to make it.
When my father started planting dill in the garden every year, that made it into the pita. As my sister and I got older and started to embrace the taste of onion, she started to include scallions in the recipe.
We've had low fat versions. High fat versions. Light butter versions. Though the basic recipe is always the same, it took twenty years or more for the spanakopita to evolve into what it is today. And finally, I've written it down.
Feel free to use this recipe as a jumping off point for your own spanakopita. My mother adapted to the changing tastes of my family - you may want to do the same. I suggest following the recipe all the way through the first time around and then changing it. Of course, you're welcome to leave it as is!
There are some things to remember when assembling the recipe. I've made this recipe so many times, I've had a few mishaps. The first is that the spinach needs to be completely dried off after you wash it. Otherwise, it will make the pita soggy.
Also, don't spray the bottom of the pan with cooking spray. I did that once, and I will never do that again. The bottom was so soggy, I couldn't even eat it!
