Mediterranean Style Kitchen - Cooking with Pumpkin

I just picked up a can of pumpkin. You know the stuff - most of the time we make pumpkin pie with it. I am actually not a fan of pumpkin pie. (Actually, I think it is "just okay") but I find that it makes a wonderful addition to my Mediterranean Kitchen.
Okay, I live in Germany at the moment but I am of Greek ancestry and I cook primarily Mediterranean foods. For all intents and purposes, I have a Mediterranean kitchen.
Anyway, I find that this pumpkin product is quite versatile especially when the temperature cools down. Here are some ideas:
Quick Pumpkin Soup
Whisk together, one small can of pumpkin, one box (about 1 quart) of chicken broth, a pinch of nutmeg, and 1 tsp. dried onion powder in a saucepan. Bring to a boil. Portion into bowls. For each 2 c. serving, stir in one tsp. heavy cream as a garnish. You can also sprinkle some chopped, fresh parsley into the bowls.
Pumpkin Ravioli
Do you make ravioli? Instead of your usual filling, stir together equal parts ricotta and canned pumpkin with some salt, pepper, and chopped fresh herbs. Prepare the ravioli as usual.
Pumpkin and Potato Puree
Prepare mashed potatoes as usual. Add one small can of pumpkin and mix it together. Transfer it to a baking dish that you sprayed with cooking spray. Dot a few squares of butter across the top and sprinkle with nutmeg and chopped garlic. Cover with aluminum foil and head in a 300 degree oven.
