Grow Fresh Herbs

When we stayed in a vacation apartment in Santorini, one thing I noticed were the pots of fresh herbs outside on the balcony by the kitchen. I notice fresh herbs all over France, Italy, Spain, and Greece when I visit. Even the Italian restaurants in Germany put rosemary, oregano, and basil in their window boxes with the geraniums.
Why not try this for yourself?
Herbs are easy to care for and you can put them indoors or outside - it's up to you. Just leave them by a sunny window and mist them every now and then with water if you are growing them indoors and just water them every now and then if they are outside.
Why would you want to do this?
Because even though we can find dried herbs in abundance, the flavor in fresh herbs just can't be beat. Nothing perfumes a dish better than fresh parsley, oregano, basil, etc. As an herb dries out, the volatile oils start to dissipate. Over time, there's barely anything left. These oils are what is responsible for the flavor.
Using the Fresh Herbs
Just remember that when you use fresh herbs, you need about 1 Tbs fresh for each tsp of the dried herb. So if the recipe calls for 1 tsp. dried oregano, you'll use 1 tbs fresh oregano.
