5 Things to Do with Pesto

Writing about keeping a fresh herb garden reminded me that I love pesto and that it is one dish that you simply can't use dried herbs for. I like to keep a tub of fresh pesto in the fridge because it offers a quick enhancement for a variety of meals and snacks. Here are my top ideas.
1. Toss Pesto in Pasta
This is a classic. Just toss a tablespoon or two in fresh pasta. I sometimes like to add a 1/2 tsp of red pepper flakes. This dish is also great with fresh veggies such as red bell pepper and grape tomatoes.
2. Spread Pesto on Crackers
I like to take a wheat cracker, spread a tiny bit of cream cheese, and then follow it up with a small bit of pesto. You don't need to use the cheese and if you do decide to use cheese it can be anything - cheddar, camambert, it's up to you.
3. Quick Veggie Saute with Pesto
Chop veggies such as zucchini, red bell pepper, onions, summer squash, etc. Add 1 tablespoon of olive oil to a saute pan and add veggies. Saute for a minute or two then toss in 1 tablespoon of pesto.
4. Spread on Meat, chicken, or fish
I like to brush grilled chicken with pesto after it comes off the grill. You can also arrange chicken breast in a baking dish, brush with pesto, and bake. You can also do this with pork, beef, bison, fish, etc.
5. Make a Quick Soup
Dump a can of diced tomatoes in a saucepan. Fill can up with water and also put in saucepan. Bring to a boil, add 2 tablespoons pesto, and serve.
